Ingredients

  • 170 ml milk
  • 1 tsp maple flavouring or maple syrup
  • 1 egg
  • 60 g butter
  • 340 g strong white bread flour
  • 25 g S&P flour booster
  • 3 tbsp sugar
  • 0.5 tsp salt
  • 2 tsp S&P even-rise dried yeast

For spreading between the layers

  • 3 tbsp butter, very soft

For the filling

  • 60 g white sugar
  • 60 g brown sugar
  • 1 tsp S&P sweet 'n spice flavouring
  • 1 tsp maple syrup

For the icing

  • 170 g icing sugar, sifted
  • 1 tbsp butter
  • 0.5-1 tbsp milk
  • 1 tsp maple flavouring or maple syrup

Instructions

  • Grease a 30cm round pizza or flan tin. Set aside.
  • Put the milk, maple syrup, egg and butter into the bread machine pan or bowl of mixer. If using the bread machine, now add the flour, flour booster, sugar, salt and yeast and select the ''dough' setting and press start.
If using the mixer; add the dry ingredients to the mixing bowl and knead using the dough hook, on high, for 10 minutes. Put into a greased mixing bowl, cover with cling film and leave to rise in a warm place until doubled in size. Proceed to step 3.
  • When the dough cycle on the bread machine has finished, remove dough from the bread machine pan onto the worktop.
  • Give the dough a short knead and divide into 3 equal parts.
  • Roll each third out using a rolling pin, on a floured surface into a 30cm diameter circle. Put one rolled out circle into the bottom of the prepared tin. Spread this round 1tbsp of the very soft butter. Sprinkle a third of the filling over this. Then Repeat with the next two rounds of dough, ending up with butter and filling sprinkled over the top.
  • Put a small glass into the centre of your dough and cut the dough into 20 sections (leaving the part where the glass is, uncut). Twist each section 5 times and lay it back down in the tin.
  • Leave to rise in a warm place until doubled in size.
  • Preheat oven to 160C
  • Bake for 22-25 minutes. Cool for 5 minutes then drizzle with the glaze.
