Ingredients

  • 210 ml water
  • 250 g strong white bread flour
  • 125 g S&P rustic multigrain
  • 1.5 tsp salt
  • 1 tbsp sugar
  • 2 tbsp butter
  • 20 g S&P flour booster
  • 1 tsp S&P even-Rise Dried Yeast
  • 1 tbsp S&P dough creamer
  • Optional: toppings such as a little grated cheese, sliced olives or fresh herbs

Instructions

  • This recipe is made in the bread machine. For the method on how to make by hand or in a Thermomix, see below.
  • Pour the water into the bread maker pan, and sprinkle in the flour and S&P rustic multigrain. Then add the salt, sugar, butter, S&P Flour Booster, S&P Dough Creamer and S&P Even-Rise Yeast.
  • Set the bread maker to the dough setting and let the cycle run. Once completed, remove the dough from the machine and place on a lightly floured surface, kneading it with your hands for a minute.
  • Divide and shape the dough into 2. Form each piece into a round ball. Place onto a greased and lined baking sheet, a little apart to give room for rising.
  • Cover with cling film, then let it rise for 45 minutes or until doubled in size. Preheat the oven to 200°C during this time. Just before being ready to cook, the loaves, place a baking tray half full of boiling water onto the bottom of the oven (to help form the rustic crust).
  • When the loaves have risen to the size you want, you can (optional) carefully cut some slashes onto the surface to give the rustic effect. Also (option) you can get creative and sprinkle on a little grated cheese for example, or some fresh herbs and sliced olives.
  • Bake the risenloaves n the preheated oven for 30 minutes . If you have used toppings, keep an eye on the browning and if necessary, put a piece of greaseproof paper over the top for the last 5-10 minutes to avoid burning. If you have a water spray bottle handy, you can also open the oven in the first 10 minutes and spray the loaves to encourage the crisp crust.
  • Once baked, remove from the over and let the bread cool completely wrapping in a festive gift wrap of choice!
