Oven-Roasted Beetroot Garlic Toasts

- 1 Baking tray
Ingredients
- 1 Beetroot loaf taken from S&P rustic ruby beetroot loaf recipe - see below for link
- Olive oil, generous amount
- coarse sea salt
- 4 Garlic cloves (or more if needed)
Instructions
- Preheat your oven to 200°C (fan or conventional).
- Thinly slice the beetroot loaf. A bread slicer (if you have one) is ideal here for even, crisp results.
- Lay the slices flat on a baking tray., cut to the size you want for serving. Drizzle generously with olive oil, then brush to coat both sides. Sprinkle lightly with coarse sea salt.
- Place the tray in the preheated oven and toast for 10 minutes, until lightly crisp and fragrant.
- Cut the garlic cloves in half.
- Remove from the oven and immediately rub the surface of each hot toast with the cut side of a garlic clove. Use a fresh clove as needed for the best flavour.

Serving Ideas
- Serve with houmous for a light, healthy lunch
- Add to a snack or antipasti platter as a pre-dinner nibble
