Sweet 'n spice banana bread
A classic banana bread spiced up which delivers a beautifully moist loaf. So good you won't be able to stop at just one slice!

Ingredients
- 125 g butter
- 200 g brown sugar
- 2 large eggs
- 6 large bananas (approx 350g)
- 1 tsp vanilla extract
- 1 tsp S&P sweet 'n spice flavouring
- 250 g flour
- 1 tsp baking powder
- 1 tsp baking soda
- pinch of salt
For the topping
- 2 tbsp brown sugar
- 1 tsp S&P sweet 'n spice flavouring
Instructions
- Preheat the oven to 180C and grease and line a standard loaf tin (approx 20cm x 12cm) with baking paper
- In the bowl of the mixer, cream together the butter and sugar until pale and fluffy then add the eggs one at a time, beating well after each addition
- Add the bananas and vanilla extract and mix well
- Stir together the dry ingredients and stir into the batter
- Transfer the batter to the prepared loaf tin
- Mix together the sugar and sweet 'n spice flavouring for the topping and sprinkle over the banana bread
- Bake for 45 minutes or until a skewer inserted into the loaf comes out clean; this can vary according to your oven
- Remove from the oven and allow to cool before serving

Suitable to freeze
Defrost 1 hour
Delicious served with natural yoghurt for a breakfast slice.
